VINEYARDS: The principal source of grapes for Cavit Pinot Grigio comes from three areas: Trentino, Fruili and Veneto. These locations are ideal for vineyard cultivation due to their exceptional soil and climatic conditions, and they’re recognized for the spectacular natural beauty of the Dolomite Alps that form their backdrop.

WINEMAKING: The grapes are carefully selected and then vinified utilizing the most advanced technology. Cold fermentation in state-of-the-art thermo-conditioned tanks preserves the natural 100% Pinot Grigio fruit and inimitable freshness of the wine.

Prosecco

A fruity fragrance with a slight hint of citrus. Bright, light and subtle with a well-balanced flavor.

 

 

 

GRAPES
100% Glera

SERVING SUGGESTIONS
Enjoy as an aperitif or with appetizers, seafood, cheeses and nuts. Also, a great pair with cured meats and desserts.

    

VINEYARDS: The foothills surrounding Treviso, between the river Piave and the Venetian Prealps.

WINEMAKING: The grapes are generally harvested from mid-September. The grapes are lightly pressed to produce the free-run must which, after decanting for 10 – 12 hours, is transferred to stainless steel tanks, where it is fermented at 18-20°C for a period of between 15 and 20 days. The wine is then stabilized and clarified before refermentation, which takes place in steel autoclaves at controlled temperatures in order to develop the wine’s characteristic perlage and fragrant bouquet. Refermentation is interrupted by cooling and filtration until the residual sugar content is 18 g/l. Sparkling wines with this sugar content are defined as extra-dry, which is the classic version of Prosecco, and is ideal in achieving the perfect balance between softness to the palate and acidity.

Rosé

With beautiful aromas of fresh strawberry and cherries, this medium-bodied rosé is fresh with flavors of ripe red fruits.

GRAPES
A blend of native Trentino red grapes.

SERVING SUGGESTIONS
Ideal with all fish dishes, white meat and lighter first courses as well as an apéritif.

  

VINEYARDS: Cultivated in vineyards in the Vallagarina and the Valle dell’Adige, in Trentino within the heart of the Dolomites.

WINEMAKING: After rigorously hand-harvesting, the grapes are pressed and vinified separately at a controlled temperature of 20°C and without maceration in order to minimize the transfer of color from the skins of the grapes.  The wines are then finished for several months in stainless steel tanks in order to maintain their fragrance and freshness. After ageing, Cavit’s oenologists taste the individual wines and determine the proportions of the different varieties that will be used to create the final blend, which is then left to stabilize for a short period prior to bottling.

Pinot Noir

With a distinctive balance with bright cherry notes and hints of red berries, it is big, bold, and complex.

SERVING SUGGESTIONS
Grilled or roasted red meats, poultry, flavorful vegetarian entrees, risottos. Enjoy with fish such as salmon, tuna and swordfish.

  

VINEYARDS: Grapes for the Pinot Noir are harvested in hilly areas throughout Provincia di Pavia.

WINEMAKING: The grapes are picked at peak maturity in the second and third weeks of September. Fermentation takes place over 6-8 days under controlled temperatures of 30°C in small stainless steel vats. The wine then is placed in larger oak barrels where it rests on its lees (skins) until release.

Moscato

With delicious notes of apricot, white peach and sage, and a wonderfully refreshing sweetness, it’s a true Italian gem.

VINEYARDS: Cavit Moscato grapes are harvested along the right bank of the Po River in southwestern Lombardy in the province of Pavia, Italy. Here, the landscape of steeply rolling hills comprises limestone and clay-based soil, well-suited to the cultivation of vines.

WINEMAKING: Cavit Moscato benefits from cold fermentation, including brief skin contact, and is refined in stainless steel tanks, with early bottling to maintain its naturally fresh bouquet.

ALCOHOL: 7.5%

Oak Zero Chardonnay

With carefully selected grapes chosen to preserve their bouquet of apple, citrus and tropical fruit, it’s fermented on the skins but never in oak.
